Ingredients

  • 2 tablespoons of ghee or sunflower oil
  • 2 tablespoons of mustard seeds
  • 1 tablespoon of turmeric
  • 1 tablespoon of ground coriander
  • 3 garlic cloves, minced
  • 4 large potatoes, diced
  • 1 large bunch of spinach
  • 1 cup of vegetable broth or water
  • Juice and zest of 1 lemon
  • 1 ½ teaspoons of sea or kosher salt

Method

Step 1

Heat ghee in a large skillet over medium heat. Add mustard seeds and cook until they pop, about 1 to 2 minutes.

Step 2

Stir in turmeric, coriander, and minced garlic, cooking for an additional 2 to 3 minutes.

Step 3

Add diced potatoes and spinach, sautéing for about 5 minutes.

Step 4

Pour in vegetable broth, lemon juice, lemon zest, and salt.

Step 5

Allow the mixture to simmer for 15 minutes.

Step 6

Serve promptly.
